Oatmeal- Pumpkin- Coconut Pancakes

In honor of Pancake Sunday, I'd like to dedicate this mornings pancake inspiration to no other than my friend, Heather of Heather Eats Almond Butter.  She just had her baby girl, Summer Juliet, a couple days ago.  I couldn't be more excited and overjoyed for her and CD. :)

That's why in honor of miss Heather, I decided to make her oatmeal pumpkin pancakes....


With a few adjustments on my part. 
I skipped the egg, and just combined the pumpkin, oats, spices and added about 1/2 C of Almond Milk and a tablespoon of chia seeds.

They came out perfect-- so yummy and tasty.  Of course, being the topping queen, I added lots of colorful toppings: Coconut butter, banana and apples, chia seeds, drizzled chocolate and shredded coconut.

Look at all those yummy textures!!

They were perfect for to start off the cold, rainy day.....
