Chocolate, pumpkin bowl of goodness.

I guess I'm one day late celebrating halloween, for I had nothing calabaza (pumpkin) yesterday!  Sad, huh?  Well, I made up for it this morning, whipping up a heavenly bowl of choco- pumpkin oats.....

Using these lovely ingredients....

And this one to do the magic :-)

Coco- pumpkin- almond oats:

1/3 C. Oatbran
1/2 C. almond milk (I used whole-made)
1/2 C. water
1-2 tablespoons spooky chia seeds
1-2 tablespoons coco powder 
pumpkin pie spice
nutmeg
lots of cinnamon
1/4-1/2 C. pumpkin puree

--Cook oat-bran with liquid, spices, and coco till mixture comes to a boil.

-- Add pumpkin once oat mixture starts boiling and stir, stir, stir (I use a spatula to whip)

-- Once desired texture, pour into a bowl and add favorite toppings.  I added almond butter, coconut granola, chia seeds, and more cinnamon!

*It would be DELISH with a generous dollop of coconut butter on top-- I'm SO doing that next time :)

By the way, did you notice that impostor can of pumpkin?!?

Dun, dun, DUN!  I think Libby has a competition going on with Whole Foods brand pumpkin puree....

Or maybe not.  I think Libby's tastes the best; however, so many brands of pureed pumpkin taste quite similar.  I don't know, we will see....

  1. I have been using the organic canned pumpkin from Wholefoods until this year when I started buying Libby's brand. I like Libby's more, it's cheaper and tastier. But then I'm not surprised that the organic brand is more expensive.

    I've actually oatbran like this before, except I didn't add the pumpkin spice. I don't seem to remember that I have a spice rack during breakfast, lol!
